What DO I Eat?

I have been wanting Mexican food for awhile now, but real Mexican food isn't all that great for you. So when I was at the store today I came up with a healthier version on enchiladas. 

Here are the ingredients that I used:
Minute Brown Rice (my staple)
lime
tomato
onion
cilantro
cheese
spinach
cumin
red pepper
ground turkey
wheat tortillas

First you throw the ground turkey in a hot skillet and brown it.

Don't let the light color freak you out. It will not look like ground beef. I know some people are into the color of their meat. 

Chop up a onion, I chopped up half of a big one. We like onion in our house.


Drop the mound of onion you chopped in the skillet with the ground turkey. Cook them until they are nice and soft.


Chop up a tomato, I know there is a lot of chop chop chopping! 
Let them join the party! Sprinkle a little cumin and a little red pepper. Careful the red pepper is muy caliente!

Spinach. Yes, that is spinach. Chop it up and add it. Spinach is great for you, why not add it to the mixture, I bet you won't even know it is there!

I made two regular flour ones for my husband, just in case he didn't like the wheat. I know, I am too nice sometimes!

Top with sauce and cheese, I used reduced fat cheese. In oven 15 minutes or so at 350.
OOOOOOH YEAH! Use the same voice as Ferris Buller's Day Off..much funnier!

How good does this look?!?!? I also made a cilantro lime brown rice on the side. Yum!

I will confess, this meal was pretty time consuming, but worth every second! If you are wanting something Mexican, you should try this. It's a WINNER!

Also, my dog got shaved today!

Chilly Spring Day

It was super chilly outside this morning. I waited until around 10 to get my workout in, hoping by then the clouds would have burned off and the sun and warmth would come in! No luck, but I bundled up the baby and myself and off we went! It actually wasn't that bad as soon as I got my blood flowing!

I did intervals today. Power walking up the hills and running as fast as I could down. Intervals burn a lot of calories, I don't do them all the time. I try to mix up my cardio just so I don't get too bored. After my running, and my intervals, I stopped off at the set of stairs in my park. Running stairs is hardwork, feels good though after you are done. The only problem today with the stairs is that there must have been some kind of luncheon or something. Right above the stairs was a BBQ, it smelled so good! As I was panting up and down these stairs city people were all walking up past me. I just stayed in my zone and didn't let what I must have looked like to them, bother me. I was there to work, not to be self conscious. By the time I was done with my stairs my tummy was a rumbling! This was actually a good incentive to powerwalk home! I powerwalked half way and then ran the rest of the way home. 
As soon as I walked in the door I knew what I wanted. I knew I had just enough veggies to make one of my favorites go to meals. Sauteed veggies and brown rice. Some have asked about it so here is how I make it:

At the beginning of the week I make a huge batch of brown rice. That way I can have it ready for when I need it and don't have to make it every time. Easy to reheat. I find that the Minute Brown Rice is the easiest and it is pretty tasty. 

The serving size that I go by is just 1 cup of cooked rice. That is plenty! Sometimes I can't even finish all of this. You could go smaller if 1 cup seems like too much.

Here are the veggies that I had left. This was the 5th meal I have made from the same veggies. I bought them at the produce stand, $4.39! Love deals on fresh produce:)

Chop chop those veggies up! I like my squash and zucchini in bite sizes, but you can slice them thin, or thick. Whichever way you like them.

EVOO as Rachel Ray would say, in a pan and get it nice and hot. 

When you see your oil getting hot toss in all the chopped veggies. You'll hear the sizzle. I put a little salt and pepper. I'm not a salty person. I think it is just because I never really grew up on a lot of salt in my food or added to my food.  But a little is fine.

Whenever I am tossing around the veggies for this dish I always feel fancy, like I am at one of those places that cooks your food on the stove in front of you. I feel like I should make a flaming onion volcano or something! Now, I like my veggies with a little bite still to them, so I they only cook for a couple minutes. But, you can cook them to your liking.

Top this bad boy with some rooster sauce and you are good to go! Eat up!

I actually had to finish this the next morning, my little was wanting my full attention. As a mom their needs always come before yours, even when your needs are like 20th on the list of 20:)

The Last Month of Freestone Doings.


Almost been a month since I last had a chance to sit and write. How sad is that, that I haven't had any time to sit and catch my breath it seems like! We have been busy, not with so much activities but just busy with life in general. Let me see if I can catch you all up:








This was taken after a day of dying eggs and egg hunting! How sweet are they?!?!
Easter came and went and the weather was sunny out a little on the chilly side. A little bit of a bummer but at least it wasn't raining. Cory always seems to work on Easter so we always go down to my parents. We dye eggs and the girls have an Easter Egg hunt out in their backyard. They always have a couple golden eggs filled with money. Em hasn't caught on the the golden egg concept, so Tay always ends up with the big loot:) Em is just so rough, she was throwing the eggs in the dye cups, there is no being gentle in her body. My Tay was and is always nice and gentle, not wanting to spill anything. Making sure her eggs are handled with care. The baby, she could care less! It is so funny the opposites between the two girls. We BBQ'ed and just had a nice day together. 

I have also been bumping up my exercise routine. The baby and I go out at least 5 mornings a week. I have pushed myself harder than I ever have and making myself get out there. I have read all kinds of articles about staying motivated and how to keep going, all of them said that if you make your exercise part of your daily routine it makes it easier. You don't even think about it, you just go it. I wish I was a better runner. Running is so hard for me.I feel like I'm awkward and that I am out of breath and my lungs are on fire after just a coupe of minutes! But, I have pushed through, it is getting better, I wouldn't say easier, but better. I can now go around 25 minutes straight. I did one morning go 30 minutes! But I have yet to be able to do it again. I will though. I have good days and bad days, I think that is normal. No matter what, something is better than nothing. I have been working out and eating right for over a month now. Sadly, I have yet to see any physical change. A little, well actually a lot, of a bummer. However, this is when I would stop and say, forget it. I'm done. Eating right and killing myself running and exercising I guess isn't for me. But I am trying to push through and I keep telling myself it will happen. Your body WILL change! It is just a matter of time. I try not to get down on myself when I get on that scale every Monday morning and the number is still the same. It is not going up, so I guess I will take that as a win, right?? The baby usually sleeps while I have her in the jogger and then when I am done I take her to her little park playground. She loves it and I burn the last of my workout calories playing with her. Win win!






We were sitting in the living room one night, the baby was on the floor coloring with her new paint marker type things that the Easter Bunny brought. She was so excited to show us what she had made, she held it up all proud!

 Last week we were down at my parents house and both the girls wanted to help my Dad outside. Em loves to water stuff! And Tay help spread some grass seed!


Well, you all are now up to date! Like I said, it as been crazy busy around here. I actually had to take 3 breaks while writing this. I have to write in spurts, a mom is always needed! I have a baby trying to crawl all over me right now as I try to say good-bye! Hahaha!
